In our hectic and frenzied world, we sometimes forget that we are married to our friend, our lover.  Get away to beautiful Newport, Rhode Island, enjoy the elegant Hotel Viking, be encouraged by practical Biblical teaching on marriage, be led in worship by gifted musicians, and relax with your lover, your friend.  This is a great weekend to remember what it was that brought you together and to enjoy renewing that desire in your time away as a couple.

From the Friesen Kitchen

    12 corn tortillas
    1 1/2 to 2 lbs. ground beef or turkey
    1-1/2 cups Enchilada sauce
    1-1/2 cups tomato sauce
    3/4 lb. cheddar cheese, grated
    3/4 cup chopped onion
    3/4 cup olives, sliced or chopped (optional)

1.    Heat oil in skillet and lightly fry each tortilla on both sides.
2.    Place fried tortilla in bowl containing combined enchilada and tomato sauces.
3.    In greased 9x13" pan, pour small amount of sauce and then cover bottom with six tortillas.
4.    Top tortillas with a layer of ground beef, onion, grated cheese, ripe olives, and sauce.
5.    Repeat steps 3 & 4.  End with cheese and garnish with olives.
6.    Bake at 350 degrees about 20 minutes or until hot, and cheese is melted. Yields 8-10 servings.
Keeping Up with Paul and Virginia

Paul and Virgina started off the month of December with a very full weekend, speaking locally on both Friday and Saturday nights, while leading the fall Engagement Matters weekend all day that same Saturday and Sunday.  Virginia said that it was one of the best "EM" weekends they've had.  One of the attendees wrote:
"The entire weekend was so amazing!  My girlfriend and I are so very thankful to have gone and we are excited about the future together.  You and Mr. Friesen did just an amazing job and we are glad to have had such wise counsel."

In mid-December, Paul and Virginia flew out west for a very exciting reason: their daughter Julie's graduation from physical therapy school!  She received her Doctor of Physical Therapy degree from the University of St. Augustine's with highest honors.  As if that weren't enough, much to her complete surprise, she was also selected as the "Most Outstanding Physical Therapy Student" of her class.  She's studying now for her boards, which she'll take Jan. 30 here on the east coast, and then she'll be off to join Derek in Mbale, Uganda.

Paul and Virginia returned to the east coast after this exhilarating weekend to do more counseling and to wrap up both the ongoing weekly Patriots studies: the couples' Bible study and the Patriot wives' study.

The last half of December and the first week of January are typically a "quiet" time for the ministry of H.I.M., when Christmas celebrations capture everyone's attention and churches have their own in-house events going on.  Paul and Virginia used the time to surround themselves with family and friends and their own Christmas traditions and personal ministries.  Virginia has written in her blog (illustrated by a number of wonderful photos!) about their precious days, filled with cooking, family sings, and gatherings. 

Starting last week, Paul and Virginia resumed their full counseling schedule, then led a dozen or so families in lots of mid-winter fun at the family getaway weekend in Boxboro, MA.  By the end of this week they will have flown off to Rome, Georgia, to resume their traveling and speaking for 2012.  If you live in the greater Boston area (not in Georgia, nor in Washington state, where they head the following week), be sure to catch Paul and Virginia at the "No Greater Joy" parenting seminar in Lynnfield, MA, on Feb. 4.  They'd love to see you!
