It may only be mid-January, but it's already time to plan for spring and reserve your site for the annual H.I.M. Memorial Day camping trip at beautiful Myles Standish State Park. As usual, the program will be relaxed. Families are on their own for both breakfast and lunch. A common evening meal is served with each family helping in preparation or clean-up once during the weekend. Arrival is Friday afternoon, with a Monday departure.
The cost for the weekend is $50 for the camp site, plus $20 per adult and each child ages 12 years old and older, and $10 per child ages 2 - 11. There is no per person charge for children under 2 years old. Fees include campsite, dinner each evening, and snacks at the campfire each evening.

From the Friesen Kitchen
8 chicken breasts
1/4 cup oil
Two 5-oz cans bamboo shoots, drained and diced
Two 5-oz cans water chestnuts, drained and diced
2 cups diced celery
3 cups chicken broth
2 Tbsp. soy sauce
1/3 cup cornstarch
1/2 cup cashews or toasted almonds
Skin, bone, and cut chicken in 1-1/2" pieces. In skillet, cook chicken. Add bamboo shoots, water chestnuts, celery, chicken broth, and soy sauce. Mix well. Bring to boil; cover. Cook about 5 minutes until crisp-tender. Blend cornstarch with 1/2 cup cold water. Add to mixture. Cook, stirring constantly until mixture thickens. Salt to taste. Garnish with nuts. Serve over hot rice.
Tip: High heat and quick cooking are essential. Don't overcook.
Keeping Up with Paul and Virginia
Weeks and months of preparation as well as God's generous blessing allowed Paul and Virginia to host a very successful day-long marriage conference with Gary Thomas this past November 14 (sold out--500 people in attendance--words of wisdom and encouragement!), as well as a special evening with Gary Thomas for area pastors held the night before. It was a memorable weekend, and included two wonderful concerts by Danny Oertli. We are immensely grateful to so many of you who served and prayed and gave to bring that weekend of ministry to hundreds of couples.
Virginia was the featured speaker at Barbara Becker's annual Creative Memories Scrapbooking Weekend on the Cape the weekend before Thanksgiving, and just after that ended, Paul and Virginia flew to the Friesen Family farm in southern California for a week of mostly R and R with extended Friesen family members.
Paul and Virginia have continued meeting with the NFL Patriot couples each week this fall and winter for dinner and marriage enrichment talks. Then, during the Patriots' "bye" week, Paul and Virginia had the flexibility do some early December traveling to visit H.I.M. family friends now living in other states, as well as to host friends traveling to Boston.
In between their travel and hosting and speaking and NFL ministry, they have continued to faithfully maintain a regular counseling ministry, often beginning first thing in the morning the day after arriving home on a late night flight.
Paul and Virginia were thrilled to be able to have Gabe, Kari, Lisa, and Julie all in town over the Christmas holidays, and were delighted to host Julie's boyfriend, Derek Johnson, for a few days as well, giving many of us who live locally a chance to meet him for the first time. Great guy!
Once again, Paul and Virginia's recent weeks have been all about building and maintaining relationships: spending time with family and friends--here, there, and everywhere. How grateful we are that you have maintained a relationship with them as well. Thank you for your support of their ministry, for caring about them and for them. You are an important part of the H.I.M. team!
