UPSIDE DOWN APPLE PANCAKE

Make this fabulous pancake on the weekend for brunch or breakfast. McIntosh apples make a wonderful applesauce-like topping.

   2 Tbs. butter or margarine
   1/4 cup granulated sugar
   2 tsp. cinnamon
   3 apples, peeled and sliced

Batter:
   1/3 cup all-purpose flour
   1/2 tsp. baking powder
   2 egg yolks
   1/3 cup milk
   4 egg whites
   1/3 cup granulated sugar

In two 9-inch pie plates or a 13x9-inch baking dish, melt butter in 400° oven, about 2 minutes.  Combine sugar and cinnamon and sprinkle evenly over butter; bake for 2 minutes.  Arrange sliced apples over top; bake for 10 minutes.

Meanwhile, in bowl, combine flour and baking powder; blend in egg yolks and milk.  In large bowl, beat egg whites until soft peaks form; gradually beat in sugar until stiff peaks form. Fold into milk mixture; spread evenly over apples.  Bake for 15 to 20 minutes or until lightly browned.  Remove from oven; loosen edges with knife and invert onto serving plate.  Makes 6 servings.

Keeping Up with Paul and Virginia

Paul and Virginia met up with Kirsten and Benjamin Watson at the PAO conference
Paul and Virginia met up with Kirsten and Benjamin Watson at the PAO conference.
When we last checked in with Paul and Virginia towards the end of 2016, they were winding up their seasonal ministry to the New England Patriots and their wives--and you surely heard that team won the Superbowl just last month. Any connection?  Can't say, but we're sure delighted for them.  Go Pats!

Meanwhile, 2017 has already been a busy year for Paul and Virginia, starting in early January with a trip to Pennsylvania to address the ministry directors at CURE.  From there they traveled to Hampton Falls, NH, to speak at both a date night and Men's Breakfast, and then it was on to Hawaii, where they've been invited to speak each January for the last several years.  January in Hawaii?? An easy "yes"!

In February they spoke in Massachusetts, Maryland, Nevada, and California, and since the beginning of March they've already been to Florida to speak at the Pro Athletes Outreach before jetting back to Massachusetts to be ready to host the annual H.I.M. Marriage Retreat in Newport, RI.  The retreat was a great success, with over 250 in attendance, an excellent array of workshop speakers, and well-received guest speakers Chris and Alisa Grace from the Biola University Center for Marriage and Relationships in La Mirada, CA.  The true success of our marriage retreat can not be taken this side of eternity, of course, but we've heard testimony after testimony of God's working to restore and redeem relationships and we're confident that the Holy Spirit is continuing to affect change in many marriages.  All praise to Him!

Speakers, workshop leaders, staff, and volunteers gathered at the end of the H.I.M. marriage conference in Newport this past weekend.

How grateful we were to be part of the team surrounding the Friesens this past weekend.  Chris and Alisa commented about the "well-oiled machine" Paul and Virginia brought together in Newport, most of whom you can see pictured here. And thanks to you for your vital support for H.I.M. Your prayers, gifts, and words of affirmation keep us all encouraged and energized for this work. May God bless you!
